
Potatoes: 2cups smashed
Bread crumps: 1/2cups
Egg: 1 beaten
Cornflour: 1tbsp
Oil for fry
Boiled eggs: 8
Coriander leaves: 1tbsp chopped
Mint leaves: 1tbsp chopped
Salt to taste
For Grind:
Coconut 1/4cup
Green chillies: 3
Coriander leaves: 1/2 bunch
Lemon juice: 1tsp
Method:
Mix chopped masala, salt, corn flour and egg in the mashed potatoes. Cut each egg into half, length-wise, spread a layer of chutney on one half and join together. Cover completely with mashed potatoes and roll in breadcrumbs and fry in hot oil till lightly browned.
