
Minced lean mutton: 500gm
Coriander powder: 1tbsp
Turmeric powder: 1 pinch
Ginger paste: 1tsp
Chilly powder: 1/2 tsp
Khus khus paste: 1/2tsp
Coconut powder: 1tbsp
Clove powder: 1 pinch
Cinnamon powder: 1pinch
Cardamom powder: 1 pinch
Besan flour: 1tbsp
Ghee : 100gm
Onion: 2
Garlic juice: 1/2tsp
Lemon juice: 2tsp
Salt to taste
Method:
Make a mixture of the above ingredients. In a pan warm 50 gms. of ghee, and fry lightly in it the small onions and 2 cloves of garlic, both finely minced. Add to this the above mixture, stir well and cook slowly for 10 to 15 mins.Turn out, let it cool, and then either pound or grind it into a paste with a squeeze of lemon juice. Form into oval cutlets and fry in the usual way, or press on the metal skewers and grill, basting well.
