Rice Biryani
Ingredients:

Basmati rice: 5cup
Onion: 500gm(sliced)
Ghee: 200gm
Cinnamon: 1" piece 6nos.
Clove: 7
Pepper: 2tbsp
Bay leaf: 2
Sugar: 3tbsp
Lime: 2
Salt to taste

For Garnishing:

Onion, Raisins and Nuts (toasted in ghee)

Method:
Soak the rice for 15 minutes and drain it. Melt the ghee in a heavy-bottomed pan and sauté the onion until it turns golden brown. Add crushed spices and bay leaf and sauté. Add rice; stir well to coat rice with ghee. In a pan, caramelize sugar and pour this into the rice. Add salt to taste and lime juice. Pour 6 cups of boiling water into the rice and cover it and cook until the rice is done.
